Nyonya Tarts

CNY is around the corner again, and this time I will to bake REAL Melaka Nyonya Pineapple tarts. Although the pineapple jam can be bought easily from bakery shops, I tell you, they do not taste as nice as compare to the Melaka Nyonya homemade ones.

I have called several Pineapple tarts maker in Melaka from Jonker Street in Melaka if they are keen to sell the cook grated pineapple, but sadly they don't (of course they are smart not too). Until I found Miche again.

Guess what, she will ask if her mum could make the paste for me this time. Geee, *so happy*.....Thanks in advance, Miche! Which means I will be able to bake real Nyonya Tarts!!

Since Miche is providing me 1kg pineapple jam, I think I might be able to produce a little bit more than what I need. If you are interested I could spare 4 boxes (only limit to 30pieces per box, Rm0.70/piece). Buzz me quick.

Special Melting Moments

My little helper and I did a simple baking yesterday.

Ingredients:
200g margerine (I uses Planta)
80g icing sugar sifted
1 tsp vanilla essence
1/4 tsp sugar

120 self-raising flour, sifted
120g corn-flour, sifted

Method:
1. Cream butter, icing sugar, vanilla essence and salt till just combined.
2. Add both sifted flours and mix into a soft-dough.
3. Spoon mixture into piping bag with star nozzle.
4. Pipe them into a shape of a rossette.
5. Bake in pre-heated oven at 170C (20mins) till light golden brown.
6. Cool on rack, sprinkle some icing sugar on top.

Tips: You can also ignore step 3&4. Instead just spoon them onto the tray and top them with honey star for decor.

Baking Tool

After spending months on my baking experiment, you will be surprise to find that until today I still do not have the baking utensils, what’s more a good oven. The tools can be very expensive, and since Qiqi’s nanny who is staying just next door have everything, so me and Qiqi usually have our baking projects over there and we enjoy the delicacy with nanny’s family.
Most of people I know here use stove ovens and I still remember once a good friend of mine actually advise on getting a good one. Surprisingly good ovens like Whirlpool Ovens can produce better cake texture as compare to the simple ones.
